Nếu hôm nào quá chán với cơm canh, món xào món mặn, hãy thay thực đơn bằng món Tây ngon với thịt bò hầm và khoai tây nghiền phô mai. Thịt bò chín mềm, thơm, ngọt, vị đậm đà ăn kèm khoai tây nghiền nhuyễn mịn rất lạ miệng.
Sơ chế nguyên liệu: Cà rốt, khoai tây rửa sạch, thái miếng. Ngò tây và húng tây nhặt lá, bỏ cành, thái nhỏ húng tây và ngò tây để riêng. Bào vụn phô mai. Rửa thịt bò, lau khô bằng khăn giấy, cắt thành những miếng nhỏ, cho vào bát.
Chiên thịt bò: Ướp thịt bò với 1 muỗng cà phê muối và hạt tiêu để hầm bò. Trong một chiếc chảo sâu lòng (hoặc dùng nồi), cho 1 muỗng canh dầu vào đun nóng, cho bò vào chiên khoảng 4 - 6 phút, thỉnh thoảng đảo nhẹ. Trút thịt bò ra đĩa.
Hầm bò: Thêm 2 muỗng canh dầu olive vào chảo, để lửa vừa đến khi dầu nóng. Thêm cà chua, cà rốt và một nửa húng tây, thêm 1/2 muỗng cà phê muối và hạt tiêu vào chảo. Đảo đều khoảng 2 – 3 phút đến khi cà rốt mềm, thơm. Thêm thịt bò vào, khuấy thêm 1 - 2 phút. Thêm 3 muỗng canh sốt Demi-Glace vị bò, 3 chén nước vào chảo. Vặn lửa to đến khi nồi hơi sôi, dùng muỗng gỗ cạo khuấy chảo tránh bị dính cháy. Khi chảo bò hầm sôi âm ỉ thì giảm lửa. Đậy nắp, hầm khoảng 30 – 32 phút hoặc cho đến khi thấy nước trong chảo giảm còn một nửa, bò chín mềm thì tắt bếp. Cho bơ vào chảo bò hầm rồi khuấy đều, có thể thêm 1/2 muỗng cà phê muối và hạt tiêu cho vừa miệng.
Làm khoai tây nghiền: Trong khi chờ bò hầm thì luộc khoai tây. Cho khoai tây vào nồi nước, đun khoảng 14 - 16 phút hoặc cho đến khi khoai chín mềm. Mang khoai ra, nghiền nhuyễn. Thêm phô mai và Crème Fraîche và bơ vào khoai tây rồi nghiền nhuyễn, có thể cho thêm chút muối và hạt tiêu nếu cảm thấy chưa vừa miệng.
Chia bò hầm thành 4 bát, thêm khoai tây nghiền. Trang trí thêm rau ngò tây và húng tây lên trên rồi thưởng thức.
