Khoai tây rửa sạch, gọt vỏ, cắt miếng. Sau đó đem đi hấp hoặc luộc chín, nghiền mịn.
Cho 30g đường và 1/4 muỗng cà phê muối vào 100 ml nước ấm, khuấy tan. Tiếp theo cho các loại bột khô vào trộn đều. Cuối cùng cho khoai tây vào nhào cùng bột. Sau đó đem đi ủ trong khoảng 1-2 tiếng.
Trước khi nhào bột, ngâm đậu xanh không vỏ trong nước ấm khoảng 1 tiếng. Tiếp theo, đem đậu xanh đi hấp chín, giã mịn.
Sau đó cho ít nước vào nồi, đổ 30g đường và 1/4 muỗng cà phê muối vào khuấy đều, nước đường sôi cho đậu xanh vào đảo, để lửa nhỏ, vừa đun vừa đảo đều tay. Đảo được một lúc cho tiếp dừa nạo nhỏ vào xào cùng thêm 10 phút nữa. Chia đậu xanh thành từng viên nhỏ đều nhau.
Bột sau khi ủ xong đem ra chia thành từng miếng nhỏ đều nhau. Mỗi miếng bột mình sẽ đập dẹt. Cho nhân đậu xanh vào giữa và vo tròn lại.
Vo đều tay đến khi viên bột tròn đều là được. Đổ mè trắng rang chín ra đĩa rồi lăn từng viên bánh vào cho mè bám đều lên bột.
Cuối cùng đổ dầu vào chảo sâu lòng, đun sôi rồi thả bột vào chiên vàng. Vớt bánh ra để ráo dầu.
Bánh rán ngọt nóng hổi ra lò rồi đây! Trời mát mát, được ăn bánh rán nóng hổi thì thật thích.
